And a lot of our trades have been with us for 20 years. They know what we’re looking for, and we know their standards as well, so it all works hand in hand.” “As far as the staff is concerned, we have a sign up in our dining room that says: ‘We don’t train people to be nice, we employ nice people,’” he adds. “That is the crux of it.
